What is disturbing is the increasing problem of food allergies and sensitivities over the last couple of generations and this includes mild sensitivities to celiac disease. Celiac is an autoimmune disorder that is the result of a severe allergy to a protein called gluten/gliadin in not only wheat but other grains such as spelt, barley, rye, oats and kamut. Undiagnosed celiac disease can not only cause digestive issues and skin problems it can cause neurological damage and be the trigger for other autoimmune diseases such as rheumatoid arthritis, MS, Lupus, Hashimoto's thyroiditis and Graves' disease. Even moods, emotions, energy and the ability to concentrate and think can be a caused or aggravated by food sensitivities and allergies.
Are increasing processed foods and the use of pesticides, herbicides, food additives, preservatives and trans fats part of the problem? Over 70% of our immune system in our intestines and yet we bombard them with fast food, packaged food, over use of antibiotics and other medications. Perhaps is our ability to protect ourselves becoming compromised? These are worthwhile questions that deserve more research and attention. I believe our life and health depend on it.
Why are these issues on the rise? Is it better diagnosis? Many clinicians like ourselves who have been in practice for 30 years know that advances in sophisticated technology in the area of diagnosis have continued. However that alone does not answer the question of why there continues to be a rise in inflammation, fibromyalgia, chronic inflammatory diseases, autoimmune diseases and other degenerative processes. Those of us who have seen hundreds and thousands of patients feel better, know the power of food. Dietary changes can resolve many health problems just by following specific eating plans that are highlighted by avoiding food allergies and sensitivities. This is evident every day in our practice.
Time for more pith. As stated by Hippocrates, the father of modern medicine, nearly 2,500 years ago: "Let food be thy medicine and medicine be thy food." There is no stronger medicine than food. "Spice" that with a bit of exercise and stress management such as regular meditation, and pharmaceutic sales will plummet as health and wellness rise.
